Instructions
  1. Dry Roast the ingredients under biriyani masala in a pan and grind it to powder or you can use store bought garam masala (u can also use the whole Garam masala packet available in (middle east) roast amd powder it and use this also...)but the flavor of the biriyani would be nice when u freshly prepare
  2. In a big pan add oil and ghee then add the chopped onion cook till soft then add ginger garlic paste saute till raw smell is gone then add greenchilli and tomato cook till thy are mushy then add biriyani masala/garam masala , redchilli powder,turmeric powder and saute till oil floats on top then add chicken pieces and dalt accordingly .close the lid and coom till 90% done as remaining it will cook with rice.
  3. Wash and soak the rice for 20 mins
  4. when the chicken is 90%done add curd ,lemon juice ,coriander leaves and pudina mix it well then add water according to the rice and allow it to boil..(let the chicken cook on its own juices donot add water early .measure the chicken stock along with the gravy then add required water while measuring water for rice.).
  5. when the water comes to boil add rice slowly and give a stir .close and cook till done.stir gently in between donot over mix as rice will break..
  6. Finally add the food colour mixed in 1 tbsp water and sprinkle on top then add 2 tbsp of ghee on it
  7. cover the top of pan with foil paper or cloth then put a lid on it tightly and place the pan in hot tawa amd put in dum for 10 mins...
  8. Yummy biriyani is ready to be served with raita n pappad.
